Ten for the road:

Batman: The Dark Knight Returns and Batman: Year One by Frank Miller

Sandman by Neil Gaiman

The Invisibles and All-Star Superman by Grant Morrison

Planetary by Warren Ellis

Preacher by Garth Ennis

There's a number of other series I'd include, but they haven't been completed in a graphic novel format.

My guess is that the winner of a broad poll would be The Watchmen, but that's not my favorite.

I would go with 1. Sandman by Neil Gaiman, in particular the first half of that series. That aligns with the first two Absolutes.

After that, definitely 2. Swamp Thing by Alan Moore. It was fantastic. But it was before the era of long-term planning and five year story arcs, so it may not stand up if you read it as a "graphic novel" rather than a series. If you know what I mean.

After those, it's less clear. I remember enjoying Camelot:3000 and Ronin quite a bit, but I haven't looked at them in decades. Would I enjoy them as much if I revisited them now? No idea!
