Logan's Run would make a nice collection - I should know since I had my set bound, because there's probably no chance we'll ever see this reprinted in our lifetimes.
Otherwise, this is a thread after my own heart: I love speculating/hoping vainly about all that sometimes obscure material from the '70s that could be reprinted. And speaking of highly unlikely possibilities, since someone mentioned the Gullivar Jones series from Creatures on the Loose, there's also the Thongor series that immediately followed.
It's also nice to see so much love for the Man-Wolf stories from (again) Creatures on the Loose and Marvel Premiere. I'm still puzzled as to why this hasn't been done yet. In fact, I'm surprised Marvel didn't collect those stories in one of those Special Edition reprint series in the early '80s - especially since Perez was a superstar artist at that point. That would have been like printing money (which is, as I understand it, was the whole reason for all of those Special Editions in the first place).
As to the other suggestions, I especially love the idea of a Black Goliath/Bill Foster book (that would collect all appearances except for Project Pegasus, since I already have that tpb), and a Cat/Tigra book that would collect everything (including b&w magazine stories) before she joined the Avengers. I'm also intrigued by the Skull the Slayer suggestions; I've seen quite a bit of diametrically opposed assessments of that series - some fans gush about it, while others say it's mediocre at best.
