It isn't so much that it's been thoroughly studied and documented -- i's more a general sense of what the market will support, based on information gathered from a number of different sources.

I think, if DC saw that there was a substantially larger market for Golden Age product if it weren't packaged as $50 hardcovers, they'd be quick to tap into it. I don't think there is.

(The money isn't so much in the cover price, either -- it's not a simple matter of selling, let's say, two $24.95 paperbacks to bring in the same profit as a $50 hardcover.)
