Well, I grew up on Weisinger Superman, and kinda sorta liked the depowered/Sand Creature story era circa 1971 --- but I'm going to have to vote for the Byrne era as my favorite. It was one of the earliest planned retcons, and the fresh look at the Superman legend -- Lana knowing his secret from Smallville days, Luthor as a respected member of society, Ma & Pa Kent still alive, the secret identity being the "fortress of solitude", Mxylplyx as a truly powerful character -- really sustained my interest back in the day. I recently re-read the stories in the 6 volumes of Man Of Steel TPBs, and I found the stories largely held up for me.

I've been catching up on the last 20 years of Superman stories through the trades, having just finished Superman and the Legion Of Super-Heroes trade, and while some of this material has held my interest, I haven't seen a consistent vision, and far too many sudden changes.

The Weisinger period for me is strictly interesting as nostalgia now -- I find when I read collections from this period, I really enjoy the stories I read when I was a kid, but stories I'm reading for the first time seem silly and unreadable.
